Rice & Beans
Rice and beans, guys, rice and beans. I honestly live for this simple, staple meal. It's such a quick and easy go-to with so much versatility and balanced wholesome goodness. If you're sitting there feeling sceptical right now, then I hope by the end of this post you'll see why Holly loves rice and beans, and you'll have a meal already planned for tonight! I mean, who doesn't have rice and beans stored in their food cupboard, right?
plain and boring?
In all honesty, I am a lover of plain food. Whilst there may be a few of you out there who can relate, I know the majority will probably disagree. Rice and beans will therefore sound very plain and boring to you! However, with this combination as a base you can really take it anywhere. Twist up a stir fry or liven it up with your favourite herbs and spices, make a sauce for on the side and then mix it all into a big bowl. My way of eating most certainly won't always be your way of eating, so just find what works best for you!
DO I USE A RICE COOKER?
I've never owned or used a rice cooker, and neither has my family. To cook our rice we simply pour it into a pan of boiling water, then simmer it for as longs it states on the package instructions. I have considered investing in a rice cooker, and it may be something I do in the future, however for now I'm perfectly content without one, because I can make beans and rice so quickly without it anyway!
CARBs
Brown rice, white rice, basmati rice, sticky rice, pilau rice, green rice . . . Choose what you fancy!
Veg
Be sure to include some greens for all those vitamins and minerals, steamed kale is a great shout, but other than that find whatever is in your fridge.
PROTEIN
Black beans, pinto beans, chickpeas, lentils, kidney beans, butter beans, baked beans, make a mixture . . . Possibilities are endless!
FATS
Rice and beans goes perfectly with tahini, which is my personal favourite, as well as avocado and a sprinkle of seeds.
